Tofu is a highly nutritious and heart-healthy ingredient. Firm and extra-firm tofu will take well to broiling, grilling, baking, sautéing and stir-frying. Softer types can replace all or some of the cream cheese in cheesecake, and can be added to puddings and salad dressings.
