We will add a new recipe to this site
each month. When possible, the new recipe will relate to an article
in the current issue of the WELLNESS LETTER. Each recipe contains
a detailed nutritional analysis.
Most people need some help in achieving a healthy
dietthat is, one that lowers the risk of heart disease and
cancer and maintains a healthy weight. These recipes were developed
by doctors and nutritionists at the School of Public Health at UC
Berkeley in conjunction with the editors of the WELLNESS LETTER.
The recipes not only help you cut fat from your diet, without losing
great taste, but also help you add "antioxidants" (beta carotene,
vitamin C, and vitamin E) and other vitamins, minerals, and health-enhancing
substances in foods.
One thing may surprise you: these recipes prove that
it isn't necessary to eliminate high-fat foods, such as butter and
cheese, from your diet. The key word is moderation. Though used
in small quantities, such ingredients can enhance the flavor of
a dish.
