If you eat red meat, there’s good reason to swap some of it for poultry: In a large study in BMJ, which followed half a million people for an average of 16 years, people who ate the most beef and other red meat (lamb, pork) had a 26 percent higher mortality rate across all causes of death than those who seldom ate it. In contrast, people who ate more poultry (as well as fish) had lower mortality rates across all causes. Lest you think upping your poultry intake means a future of plain broiled chicken breasts, here are nine recipes—from fiery Turkey Enchiladas to chilled Duck Salad with Soba Noodles—that prove that poultry is anything but prosaic.
