Sweet potatoes actually aren't tubers, like potatoes, but roots. They're high in fiber and rich in iron, potassium, vitamin B6, vitamin C, and vitamin E. And their characteristic orange flesh is an excellent source of beta carotene (more than the daily recommended intake in one sweet potato). These tasty and tantalizing side-dish ideas make use of both potato types.
