Zesty Lime-Broiled Shrimp

by Berkeley Wellness

This dish is pretty, elegant, and simple to make. Serving suggestion: Though these shrimp are delicious by themselves, you might want to try a fresh salsa or relish to go with them. Tart flavors in particular would be a nice contrast.

  • ½ teaspoon grated lime zest
  • 2 tablespoons fresh lime juice
  • 2 tablespoons reduced-sodium soy sauce
  • 2 teaspoons light brown sugar
  • ⅛ teaspoon cayenne pepper
  • 1 pound large shrimp, shelled and deveined

1. In a large bowl, stir together the lime zest, lime juice, soy sauce, brown sugar, and cayenne. Add the shrimp, tossing to coat, and let marinate while you preheat the broiler.

2. Preheat the broiler. Place the shrimp on a broiler pan, drizzle the marinade over them, and broil 4 to 5 inches from the heat for 4 minutes, or until lightly browned and opaque throughout.

Makes 4 servings.
