Double Pineapple Sauce

Double Pineapple Sauce

This sauce can be served with either sweet or savory dishes. It’s equally delicious over frozen yogurt or alongside grilled chicken or pork.

Makes 2⅔ cups.


  • 1 cup pineapple juice
  • 3 tablespoons honey
  • ½ teaspoon cinnamon
  • ½ teaspoon chili powder
  • ⅛ teaspoon ground cloves
  • 1 fresh pineapple (about 3 pounds), peeled, cored, and coarsely chopped


  1. In a large non-reactive skillet, stir together the pineapple juice, honey, cinnamon, chili powder, and cloves. Bring to a boil and cook, stirring frequently, until reduced by half, about 7 minutes.
  2. Stir in half of the chopped pineapple and cook, stirring frequently, until thickened, about 5 minutes.
  3. Remove from the heat and let cool to room temperature. Stir in the remaining chopped pineapple. Serve at room temperature or chilled. Store the sauce in the refrigerator.
Nutrition per ⅔ cup: 120 calories, 1g total fat (0g saturated), 2g dietary fiber, 29g carbohydrate, 1g protein, 7mg sodium.
