Cipolline Agrodolce

Cipolline, small flat onions, take very well to this agrodolce (sweet-sour) preparation. If you can’t find cipolline, use small white or red onions.


  • 2 pounds yellow or red cipolline
  • ⅓ cup red wine vinegar
  • ⅓ cup chicken broth, vegetable broth, or water
  • 2 tablespoons sugar
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon rubbed sage
  • ⅛ teaspoon allspice


  1. In a large pot of boiling water, cook the onions for 3 minutes. Drain and peel, leaving the stem end intact (this will keep the onions from falling apart).
  2. In a large skillet, combine the vinegar, broth, sugar, salt, pepper, sage, and allspice. Bring to a boil over medium heat. Add the onions and reduce to a simmer. Cover and cook, shaking the pan occasionally to coat the onions evenly, until the onions are tender, about 25 minutes.
  3. Increase the heat to high, uncover the skillet, and cook, stirring constantly, until the onions are glazed, about 3 minutes.
Makes 4 servings.
