Veggies Increase Meal Appeal

Here’s more motivation to serve vegetables at dinnertime: Vegetables increase the appeal of the whole meal, as well as positive perceptions of the cook, suggests a new study from Cornell University.

When presented with chicken, steak and pasta meals with or without vegetables, participants thought that those with vegetables looked more “tasty” and “loving.” What’s more, a food preparer who was described as serving vegetables with a meal was judged to be more “thoughtful” and “attentive.”

Most Americans fall far short of the recommended intake for produce, but as the study noted, more vegetables would probably be served “if preparers know that the addition of vegetables makes them appear to be both a better cook and a better person.”
