9 Ways to Serve Sweet Peppers

Sweet peppers take on a wonderful smoky flavor when broiled, grilled, or fire-roasted whole over an open flame. Cooking peppers this way also allows you to peel them easily if you wish. Peppers also make a healthy and tasty main dish. Here are nine serving suggestions for sweet peppers.

1. Top toasted or grilled bread with an assortment of colorful roasted peppers and a drizzle of olive oil.

2. Stuff peppers with chili, rice, ground turkey, or vegetables and bake.

3. Add roasted red peppers to pesto.

4. Combine puréed roasted bell peppers and garlic, and use as a topping for pasta or as a fat-free sauce for poultry or pasta.

5. Stuff small sweet peppers with goat cheese and serve as an appetizer.

6. Add diced fresh peppers to salsa.

7. Add a swirl of red pepper purée to a creamy soup for both flavor and color contrast.

8. Scatter pepper slices over pizza.

9. Prepare a green sauce with roasted green peppers, green herbs, lime juice, and a little olive oil. Serve with grilled chicken or fish, or toss with pasta.
