11 Ways to Serve Corn

Roasted corn-on-the-cob is an American BBQ favorite, but there are many ways to use this sweet grain. Try some of these creative serving suggestions for corn.

  1. Skip the butter on corn-on-the-cob and use wedges of lemon or lime instead.
  2. Add corn kernels (raw or cooked) to turkey burger mixtures.
  3. Use corn kernels in mixed vegetable dishes.
  4. Toss cooked corn kernels with halved cherry tomatos, cucumbers and cilantro. Dress with lime juice, olive oil, and cilantro for a light salad.
  5. Add cooked sweet corn kernels to pasta sauce, stew, or a stir-fry.
  6. Add corn kernels to pancakes as they cook.
  7. Add coarsely whole or chopped cooked sweet corn kernels to your favorite cornbread recipe. You can also add cooked diced green chiles.
  8. Remove the silk on corncobs but leave the husks on. Brush the kernels with a combination of olive oil and spices (try cumin and black pepper), put the husks back in place, and grill or roast the corn.
  9. Make corn soup or chowder. Puree cooked corn with roasted and peeled poblano pepper and chicken stock. Add chopped sautéed onion. Serve topped a bit of chopped cilantro if you like.
  10. Use fine white-corn grits in place of yellow cornmeal in an Italian polenta recipe.
  11. Cook whole hominy (or use canned, rinsed) and toss with sliced scallions, diced red bell pepper, and a lime vinaigrette for a side salad.
