When Garlic Sprouts

If your garlic has sprouts, don’t throw it out. Not only is sprouted garlic—with its green shoots growing out from the bulb—safe to eat, but new research from South Korea in the Journal of Agricultural and Food Chemistry found that garlic sprouted for five days had significantly higher antioxidant activity than fresh garlic cloves. If you don’t care for the bitter flavor of the shoots, you can cut them out and still use the bulb. Or try planting the cloves in some soil (sprout side up) to grow your own garlic.
